Sugar high

Caldo de Cana stands are all over the place. Peter and I stopped at this one on our drive from the airport on my first day here. We stopped again on our way home from Taubaté yesterday. What's caldo de cana? Limey sugar water. You can buy it in bottles, but it doesn't hold up well. Folks in the know say it's best to get it at a stand.

Here's how they make it: The proprietor takes a stalk of sugar cane and starts it through a special smooshing machine that squeezes out all of the juice. Pour it over ice, add fresh-squeezed lime juice, and you have nature's original sugary soft-drink with no nutritional value! But I can speak from personal experience, it's really delicious on a hot day – especially if you add extra lime. They also make them with pineapple juice.

You can get a your own smaller smooshing machine at a farm or hardware store for about $150 (US).

The stalk of sugar cane goes through two heavy duty compression rollers  and the sugar cane juice falls into a pitcher below.
